My version of cooking – Mushroom rice!!!!! simple yet easy ๐Ÿ˜‰๐Ÿ˜„

Mushroom rice!!!!!! Simple and easy to pull off in time. Say if yu r in rush to office r lunch prep fr yur children’s, ย it gives you a great hand.

  • Mushroom
  • Onion
  • Green chillies – 6 to 7
  • Ginger
  • Garlic – 4 to 5
  • Fennel seeds
  • Cinnamon – 3
  • Cloves – 4
  • Oil
  • Cashewnut
  • Salt
  • Coconut milk (optional)
  • Rice
  • Coriander leaves

Switch on the stove keep yur cooker and add some oil along with ghee. Once heated just add the cashewnut and give a light stir until it turns brown, remove it off. Then add some fennel seeds, cinnamon 2 or 3 small pieces and 3 to 4 cloves. Following that chop off the garlic and small piece of ginger, add tho the above. Once they all get mixed with oil you will get nice aroma. Then cut the onion sideways and add to the mixture and give a nice stir until it turns little brown not completely. Do not add the green chilli before because it might get burnt in the oil, so you don’t get that spicy taste to the rice. Take 6 to 7 green chillies remove the top and slit the chillies in the middle , add to the above mixture. You can add or remove the amount of green chillies as of your choice. This all happen in five mins.

Before starting the cooking itself clean the mushrooms and peel of the skin frm the umbrella part of mushroom and cut into pieces but not into small ones because while cooking it gets reduced, so cut into somewhat big ones. Add those cut mushrooms into above mixture and give a nice stir. Add salt for your rice and stir it. Then you can add Coconut milk instead of water to the rice you gonna add. It gives creamy flavour and texture. You can add water to the rice and atlast before closing the cooker lid you can add some 1 cup of coconut milk. It can be done in either ways of your choice. So I am adding rice. For one cup of rice I am adding one cup of Coconut milk and same applies to water also. So give a good stir and close the lid. Leave for 3 whistle and your yummy mushroom rice and add the lightly fried cashews along with that add chopped coriander leaves. It s absolutely ready to be served. ๐Ÿ’ž๐Ÿ’– Try it.
